I want cookies

I’ve done a lot of food shopping lately and my stash at home is limited only to chocolate bars so I needed to make some cookies.

I had all kinds of nuts, chips, baking coconut, oats and peanut butter so there was no reason not to have a different kind of dessert.

I borrowed from the sugar cube cookbook again to make giddyup cookies.

These included chocolate chunks and for the texture I wanted, oats and coconut.

The cookies turned out pretty thick and made for a crunchier cookie the next day.

I would recommend dipping them in milk or heating them up a little bit to soften them.

They are not inedible but people who enjoy a softer cookie might want to try the suggestions above.

The batch was also quite large so I brought some to my Salem friends and to my friend in Hillsboro.

And I am still snacking on them a week later 🙂

They also were a fine accompaniment as I worked my way through the “Attack on Titan” anime that I had to return to my F3’s boyfriend.
